Ebleskivers

A Scandinavian dish, ebleskivers (or
"aebleskivers") are probably the one of the most 'traditional' foods my
family made while I was growing up. Every Christmas morning since birth
this is what I really looked forward to - beautiful spherical golden pillows
of pure bliss. Since it's shape and not ingredients that define the
ebleskiver, you will need a special ebleskiver pan to make
these (cast iron is preferable) - and I find that bamboo skewers are the
best tool to flip these while cooking. Drench in maple syrup, fruit, or
powdered sugar - your preference.
Directions

Beat egg yolks, add sugar, salt and milk. Then add the flour, soda and
baking powder which have been sifted together. Last, fold in stiffly
beaten
egg whites. Put small amount of oil in each cup of pan, fill with dough.
When bubbly, turn and finish cooking.

2 cups flour
3 eggs, separated
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon soda
2 teaspoons sugar
